Refreshing soba salad with peach, prosciutto, and mozzarella 🥗 Takes just about 10 minutes to make!
Ingredients (2 servings)
- 1 yellow peach
- 1oz arugula
- 3 slices of prosciutto
- 4oz of mozzarella
- 1 Pack of SANGAKU Soba (7 oz)
DressingÂ
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1/2 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp chili flakes
- 1/4 tsp garlic powder
- 1/2 tsp dried basil
Recipe
1. Boil Water: In a large pot, bring 4 quarts of water to a boil.
2. Make the Dressing: While waiting for the water to boil, combine all dressing ingredients in a bowl or a jar. Set aside.
3. Prepare Toppings: Slice the peach
4. Cook the Soba: Once the water is boiling, add the soba noodles and cook for 6 minutes, stirring occasionally.
5. Rest: After 6 minutes, turn off the heat, cover the pot with a lid, and let the noodles sit for 2 minutes.
6. Rinse: Drain the soba in a colander and rinse thoroughly under cold running water.
7. Assemble: Arrange the soba on a plate. Top with arugula, peach, prosciutto, and mozzarella. Pour the dressing over the salad and toss to combine.
